Tonight's creation: veggie sheppard's pie

The bottom half:
- cook a cup of frozen mixed veggies with a can of cream of celery soup
- a squirt of ketchup
- some chopped onion, just because
- salt, pepper, cook
- when everything is heated thoroughly, throw in a package and a half of Italian flavored Veggie Ground Round (fake hamburger
- simmer awhile and then throw/press in casserole dish

The top half:
- peel, cut up, and boil 2 large yams
-throw in about 1/4 head cauliflower, to cut the sweetness and starchiness a bit
- once boiled, mash with butter, salt, pepper
- spoon on top of previous layer

Final step:
-put in 400•F oven for 15 minutes (uncovered)
- let it cool down/firm up some before serving

Fancy additions:
- sprinkle a layer of mozzarella cheese and bread crumbs (Italian flavoured, if you have it) before you put it in the oven to make a yummy crust on top
***might have to bake it a bit longer depending on how much cheese & breadcrumbs is thrown on this beauty

(this is what happens when you watch The Food Network when having coffee at a friend's house...... I hope this concoction freezes well. Who eats Sheppard's Pie in the middle of summer anyway?!?)
